Maltose
is a kind of sugar used as sweetener, which sweetness is only
30% of sucrose, but very tasty. Small chance of crystallization
make it help to prevent starch coherence. Maltose is thermostable
and acid resist. It is difficult to be coked, neither does colored
product can be generated during heating. It is widely used as
humidity adjusting agent, crystallization preventing agent, stabilizing
agent, carrier, swelling agent etc in fermentation, drinks, tines,
candy and cakes industries.
