Characteristics of Nisin
Nisin also known as S. Lactic peptide is a
kind of polypeptide, it will be rapidly inactivated intestine
by digestive enzyme after eaten in, without any residual, and
extensive micro-biological have not shown any cross resistant
between Nisin and medicine. Nisin possesses anti-microbial activity
against a wide range of Gram-positive bacteria which causes food
rotten, especially inhibits the heat-resistant bacillus, Stearothermophilus,
Clostridium Botulinum and Listeria Monocytogenes. It is high efficient,
non-toxic and safety. It is a kind of no side-effect natural food
preservatives which has excellent solubility and stability.
